Cranberry-Apple Crumb Cake

Cranberry-Apple Crumb Cake

In this household, we’re big coffee/crumb/streusel cake eaters.  Actually, we love anything with crumb toppings.  Muffins, bread, cakes.  You name it, we love it.  The more crumb the better! Cakes with layers and thick frosting, not so much.  I love looking at them but eating them is another story, unless they’re *really* good and it has to be chocolate.

Dark Chocolate Chip Pumpkin Cheesecake Bars

Dark Chocolate Chip Pumpkin Cheesecake Bars

Happy Wednesday friends! I wanted to squeeze a few more pumpkin recipes in before the season ends so here’s another one.  I’m not sure if the markets are still carrying pumpkin cream cheese.  If they are, you should definitely buy a package and make this.  I’m not big on cheesecake in general because they’re huge and so rich (I’m thinking Cheesecake Factory here…).  I’m a firm believer in everything in moderation.  But cheesecake bars, I love.  They’re smaller and for me, it’s plenty to remedy any sweet cravings you may be having.

Peanut Butter Cup Snack Cake

Peanut Butter Cup Snack Cake

I originally was going to call this a breakfast cake but was worried no one would buy this as a breakfast cake since it’s full of candy.  I suppose if you want it for breakfast, you could.  Chris and I certainly did munch on this for breakfast with our coffee and it was delicious!

Pumpkin Chili Mac

Pumpkin Chili Mac

Remember my pumpkin chili? Well I took the leftovers and made it into a baked pasta dish.  I love chili and all but having the same thing meal after meal can get boring and monotonous.  This is before I learned about freezing chili.  I’ll have to try that the next time I make a big pot.  You can make this with any chili recipe, even canned ones.

Pumpkin Espresso Chocolate Chip Bread

Pumpkin Espresso Chocolate Chip Bread

A few weeks ago, Chris and I splurged and bought ourselves a one-touch espresso machine.  We’ve had our Starbucks Barista machine for over 10 years and thought it was time to retire it.  It was a great machine but it was manual and cumbersome.  Technology has come a long way.  Now you can make a great espresso drink with a touch of a button! What used to be a 20-minute process to make a latte now only takes a couple minutes!

Roasted Red Pepper Soup

Roasted Red Pepper Soup

My mother-in-law’s visit was super brief! I thought we were going to spend the entire day together.  It turned out, we only spent lunch and dinner together eating out.  During the in-between time, she jetted off to sightsee with her fiancé.  On the way to the city, they saw traffic on the Bay Bridge.  The traffic in the city was so bad that they couldn’t make it to the Golden Gate Bridge so they turned back around.  Bummer!

Blueberry Chocolate Streusel Bread

Blueberry Chocolate Streusel Bread

I hope everyone is having a lovely long weekend! We spent it barbecuing with family, some cooking/baking and fighting off the ants and spiders! Ugh… one of the things I hate about home ownership is battling pests! Flies, spiders, ants, racoons, skunks —you name it! I’m relieved that I’m having my home fumigated on Tuesday.  Hopefully most of them will be gone by then.  Chris and I used to live in a condo so we didn’t encounter pest problems but we did have some noisy neighbors.  Either way, they’re both pests.  At least with these pest, they’re not loud and obnoxious, just creepy.

Orange Sour Cream Pecan Cake

Orange Sour Cream Pecan Cake

I got a bag full of cuties (oranges) from Kimi the other day.  There were so many of them that I didn’t know if we were going to consume them in a timely manner.  We’re not fruit people.  Plus, they weren’t all that sweet (more of a reason why we’re not fruit people) so I decided to bake with them.  Luckily they’re small so I used four of them in this recipe.  That’s half the bag, whew! I hate waste.  Now I just need to figure out what to do with the other half of the cuties.  If you like orange and pecans, this will be a new favorite.
