I usually don’t do a lot of cooking (or baking) when I’m cooking for one. And yes, it sucks when cooking for one (some may not agree). I don’t really go all out when I’m cooking for myself but I thought this fried rice recipe was blog worthy to post. It’s quick, casual and leftovers are great the next day. I’m so glad Chris is coming home today. I can cook for two again —yay! Happy Tuesday!
Ingredients:
- 2 eggs
- 1 tablespoon of half and half
- olive oil for cooking
- 6 ounces of Spam, diced
- 1 small onion, chopped
- 2 cloves of garlic, finely chopped
- 2 small carrots, peeled and diced
- salt and pepper to season
- 1 1/2 cups of cooked rice (day old rice works great here)
- 1 teaspoon of curry powder
- 1/2 teaspoon of soy sauce
- 1/2 cup of frozen peas
- cilantro leaves for garnish (optional)
Preparation:
In a small bowl, beat eggs with half and half. In a large deep skillet over medium high heat, add olive oil and eggs. Scramble eggs until cooked. Transfer to a bowl and set aside.
In the same skillet over medium high heat (drizzle some olive oil if needed) add diced Spam and cook until brown, about 2 minutes. Scoot Spam to the side of the skillet and add chopped onions and garlic. Cook until onions softened then add carrots. Lightly season with salt and pepper. Add cooked rice and use your wooden spoon to break up the rice. Then add curry powder, soy sauce and scrambled eggs. Stir everything together to combine. Then stir in frozen peas and turn the heat off. At this point the rice is ready. Check for seasoning before serving. Garnish with cilantro leaves.

Never had Spam. But oh boy am I curious.
Great idea to add a little curry powder to the fried rice! A friend of mine gave me a bunch of spices the other day because she knows I’m trying to incorporate more spices into my cooking. This is a great idea. I only just made fried rice for the first time (this from a Chinese person!) the other week – very yummy. And yours sure looks goood! Enjoy your husband’s homecoming.

Exactly! I prefer to share my meals with people so when I’m dining alone, I rather eat something less fussy and quick.

I keep telling myself that I should make fried rice but have never gotten around to it — until now, that is. You added spam, my very secret pleasure. I can make my fried rice — with spam — and feel guilty no more. Fried rice is healthy … it has carrots in it. And if the fried rice is healthy, the spam is healthy by association. Thanks, Anne! Fried rice most certainly deserves a place in the blogging world. I thought the same thing as you but then I had several requests for me to write up a post just on the process of making fried rice. Who would have thought fried rice was even worthy of a post? That post was a huge hit and so it your version of fried rice with curry powder, it makes your fried rice a beautiful yellow colour and adds some nice heat to the mix.
