Oxtail soup has always been a favorite of mine. I didn’t grow up on it but I eat it often enough, as if I did. My sister made this dish for me years ago and ever since I always make it a point to cook it whenever Chris or I are sick with a cold/flu or when it’s cold out. It’s not a heavy or chunky soup, it’s a brothy soup with a ton of flavors. I always make a big pot of it but having it day after day can get boring and tedious.
I’m having one of those real lazy days where I want something on the dinner table without having to put a lot of effort into it, or shopping for that matter. I know, I’m lazy but don’t we all have those days? I don’t want to order take-outs either —ick! After all the eating out, take-out is the last
thing I need.
This past week, we’ve been doing some upkeep to the house on the outside in preparation for the rainy season. We got our house (shingles) stained, painted, gutters patched and cleaned. The work is almost done and it looks beautiful! Antonio, our contractor, did a great job! I can’t wait to see when it’s completely finished.
I love dim sum. My friend Lisa and I meet up once a week or once every other week for lunch at our favorite dim sum spot. There’s something about dumplings I find very comforting. Pork and Preserved Egg Congee, also known as Jook or Porridge is a common item you’ll find at a lot of dim sum restaurants. I used to love ordering this dish but by the time when I’m done eating, I’m already halfway full which doesn’t leave me a lot of room for other dishes. I now make them at home whenever I have a craving. It’s usually when I’m under the weather or when the weather is gloomy. Neither was the case today, I just felt like having something soothing.
I hope everyone had a lovely weekend! Chris and I were lazy pretty much all weekend long. I love those kinds of weekends! And since we were lazy, I made a simple risotto dish for dinner.
We are mushroom lovers so we really dig this wild mushroom risotto recipe. Now I know mushroom is an ingredient that most people either love or hate so if you are a lover like us, you’ll really love this dish. And this can easily be a vegetarian friendly dish —just swap out the chicken broth for veggie broth. Have a great week!
I usually don’t do a lot of cooking (or baking) when I’m cooking for one. And yes, it sucks when cooking for one (some may not agree). I don’t really go all out when I’m cooking for myself but I thought this fried rice recipe was blog worthy to post. It’s quick, casual and leftovers are great the next day. I’m so glad Chris is coming home today. I can cook for two again —yay! Happy Tuesday!
This recipe was inspired by Massi of Massi’s Kitchen. Massi did a post on Risotto agli Scampi al profumo di Prosecco in December using Prosecco and shrimp in his risotto dish. I have never cooked using Prosecco so I thought it would be interesting to try. Not only was it delicious, it looked beautiful and elegant to serve to company. Yesterday was Kimi’s birthday so I thought this would be the perfect dish to serve as a main course. As the appetizer course, I served a Spicy Tuna Poke Crostini which I will post at another time. Everyone seemed to enjoy the food and went home with a happy belly. So if you are looking for a dish on those special occasions, this would be good one to make. Happy Birthday Kimi!
Moving day is fast approaching and all my cookware and bakeware are packed away. I leave you with this one last recipe until I get settled in the new place. Au revoir!
I bought a big container of kimchi at the market so I’ll be doing a few more recipes with it. Naturally, kimchi fried rice comes to mind. The fried egg on top is optional but I think it really completes the dish.
I didn’t start making risotto at home until a few years ago. I always thought it was a difficult dish to make. I saw an episode of 30 Minute Meals where Rachael Ray was demonstrating how to make it. While it is an easy dish, it certainly didn’t take 30 minutes! For me, it took about 45-50 minutes.
