Every so often, I do enjoy a nice pot of chili. I usually make it early in the week so I have a go-to meal whenever I feel too lazy to cook. I prefer a chili with multiple kinds of meat —it gives it a nice texture, in my opinion. What do you put in your chili?
Kimi told me the best bacon she had was the Black Pig bacon out in Sonoma. She had it in some corn bread, which she never eats or likes. It was so good, she got a package. The other day, I spotted some at the market so I bought it. I thought it would be fun to bake with it and when the weekend rolls around, I can have it for breakfast.
Last night, Chris and I had Hawaiian food for dinner. It took me back to the times when we vacationed in Hawaii and all the wonderful poke dishes we had. I was inspired to make my own version of tuna poke at home. This is awesome with some rice and a side of macaroni salad (not pictured). I didn’t make the salad, as I was lazy. I’ll have a write-up of the recipe soon in another post.
Tonight is leftover night. I had some soup leftover from Saturday and wanted to pair something savory with it. I had some chorizo sausages in the fridge so I thought a savory muffin sounded pretty good. Feel free to have this for breakfast. Chris’ coworkers always do whenever I make savory muffins. 🙂
I was feeling a bit lazy today and didn’t want to go through a lot of trouble cooking dinner tonight. Since I had some asparagus and defrosted shrimp, I thought I’d combine the two. I also had some carrots so I threw that in. Took no time at all —I was done cooking within 45 minutes.
Kimi came over for dinner last night. And to make things easy for myself in the kitchen, I made a pot of soup and sandwiches as our meal. I saw some nicely ripe heirloom tomatoes at the market so I decided to make roasted heirloom tomato soup and turkey cheese sandwich with fig chutney. The sandwich was a nice dunker for my soup.
I love the smell of baked goods in the oven. I noticed I had some crumbled goat cheese leftover from a dinner party so I decided to make good use of it along with some beer in the fridge. Enjoy!
