My mother-in-law is engaged! This is her third marriage and I hope it’ll be a happily ever after for her.  Chris and I have been together for almost 15 years and it has been a wonderful and blissful union.  I hope she finds the same with her new fiancé.  She sounded really happy over the phone about being engaged to a man she has known for 20 years.  I’m happy that she’s happy.  She deserves it.  She’ll be visiting us with her new fiancé next Tuesday.  I know, odd day but they’re only in town for a day.  This means I’ll be cleaning the house this weekend.

Warm Jalapeno Crab Dip

Yesterday morning, I spotted a spider lurking around my dish rack.  I was so grossed out by it I had to hose it down with water then turned on the garbage disposal to make sure it’s dead.  One time, a waterbug crawled up my garbage disposal and it scared the bejesus out of me.  I had to make sure that didn’t happen again.  With that creepy crawler crawling through my clean dishes, I had to load everything in the dishwasher, dish rack included, to sanitize everything.  I detest spiders don’t you?

Weird to be sharing that on a food blog but enough about spiders and let’s talk about food (if you’re still with me)! I’ve got a good one today.  If you love crabs and if you love dips, this is a good one to make when company comes over.  And it takes no time to make –don’t you just love that? I love the jalapeno pepper in here.  It gives it heat but is not overpowering.  Have a great weekend everyone!

Chili Cheese Dip

I came across this recipe on the back of my chili bottle.  It was a fairly easy recipe to make and with so little ingredients so I made it over the weekend.  Although I’m not a fan of processed cheese, this was quite tasty.  My family came by and we all snacked on this dip.  My nephew LOVED it! He’s a cheese lover so what’s not to like? This dip is perfect for those casual impromptu entertaining and great for when you’re watching a game.  Bust open a bottle of beer and it’s all good!

Pancetta Pepper and Capellini Frittata

It was a lazy Sunday yesterday.  Didn’t do much but cooking and chores, which included ransacking my fridge and tossing anything past its prime and unpleasant.  I was going through the fridge and saw some leftover fresh capellini pasta and bell pepper I wanted to use up, and this dish was the perfect place to use them in.  The frittata was very filling.  The pasta really made it more substantial than your average frittata and it gave it texture! Every so often I would make bangers and mash for dinner.  I usually use Bratwurst sausages.  But in the month of March, my market always carries Irish bangers.  In celebration of St. Patrick’s Day, I thought I’d make it as Irish as possible.  Starting with the Irish bangers and then the Guinness beer.  You have Bangers and Mash with Guinness Onion Gravy! Goat Cheese and Scallion Muffins

I’ve been baking one too many sweet treats lately that something savory was in order.  I absolutely love goat cheese in baked goods with green onions.  Not only is it flavorful with only two main ingredients, but it also smells amazing when it’s in the oven.  I did a Goat Cheese and Scallion Beer Bread last August.  The bread had a very dense texture but was nevertheless tasty.  This time, I thought I’d make it muffin style.  It has an airy and soft texture and is best when served warm.  Serve it with a bowl of soup and you have yourself a complete meal.
