Can you tell I’m a huge fan of crumbs? I can’t help it.  I just want to add crumbs to all my muffins, bread and cakes! I’m finally starting my holiday baking.  So for my first baking recipe, I thought I’d kick it off with something eggnog and something Kahlua! Yes, it’s a FANTASTIC combination if you haven’t tried it already.  This is definitely a muffin you’ll want to have coffee with.  It’s like peas and carrots, they go hand-in-hand.  And a little dark chocolate can never hurt in a combination like this.

Cranraisin Eggnog Muffins

Earlier this week, I was invited to participate in the Baking with Spirit challenge hosted by Janine at Cake of the Week.  The month of December is all about baking something Christmas related.  And what could be more Christmas related than eggnog? Since I’ve been obsessed baking with eggnog lately, I thought it would be a fun challenge to take part in.

These Cranraisin Eggnog Muffins are rich and delicious.  The crumb topping, the boozy cranberries and raisins are the best part, in my opinion.  Nothing better than biting into those plump, juicy cranraisins soaked with brandy.  Then you have the sugary, crunchy, sweet topping giving this muffin a really
lovely texture.

Eggnog Coffee Cake

I know I’ve been on an eggnog binge (kinda) lately with all these baking with eggnog.  In just a few weeks, there won’t be any left in the stores so I thought I take this opportunity to go crazy with it.  Chris and I picked up a couple of bottles of aged spice rum at the Duty-free shop in Mexico.  We added some into our eggnog last night and it tasted fantastic! This aged spice rum is smooth and has a very slight hint of sweetness so I thought it would be phenomenal in this Eggnog Coffee Cake.  If you like eggnog and you like coffee cake, you’ll dig this one.

Pumpkin Eggnog Blondies

I baked these blondies today for my new neighbors.  Since this is our first holiday in the new house, I wanted to do something nice for them.  I wanted to bake something with a festive ingredient and also something that was easy to package.  Chris and I sampled these blondies and were delighted to discover that they tasted like a pumpkin pie with eggnog.  So if you dig pumpkin pie, bake a batch of these blondies today!
