Garlic Chipotle Cheesy Bread

Garlic Chipotle Cheesy Bread

Remember my Garlic Chipotle Butter recipe? Well, a fellow blogger, Rachel of Rachel Cotterill, suggested using this on a garlic bread. I did, and it was the best suggestion ever! It rendered so much bread for just two people that I took it over and shared it with Kimi, LLS and LLJ.

Burrata with Roasted Tomatoes and Pesto

Burrata with Roasted Tomatoes and Pesto

It’s the start of another week! I hope everyone had a lovely weekend.

A couple of months ago when Chris and I were in Napa, we had lunch at this cute little wine bar.  One of the dishes we ordered was their housemade burrata.  It was served with tomatoes and pesto on some grilled crusty bread.  It was heaven! I couldn’t stop thinking about this dish since then so I decided to attempt this at home.

I went the quick way and used store-bought pesto.  I’m guessing that’s why the pesto isn’t all that vibrant green in my photos.  ::: sigh ::: It was delicious but would have tasted (and looked) better with a homemade sauce. Enjoy your week!

Warm Jalapeno Crab Dip

Warm Jalapeno Crab Dip

Yesterday morning, I spotted a spider lurking around my dish rack.  I was so grossed out by it I had to hose it down with water then turned on the garbage disposal to make sure it’s dead.  One time, a waterbug crawled up my garbage disposal and it scared the bejesus out of me.  I had to make sure that didn’t happen again.  With that creepy crawler crawling through my clean dishes, I had to load everything in the dishwasher, dish rack included, to sanitize everything.  I detest spiders don’t you?

Weird to be sharing that on a food blog but enough about spiders and let’s talk about food (if you’re still with me)! I’ve got a good one today.  If you love crabs and if you love dips, this is a good one to make when company comes over.  And it takes no time to make –don’t you just love that? I love the jalapeno pepper in here.  It gives it heat but is not overpowering.  Have a great weekend everyone!

Beef Empanadas with Olives and Raisins

Beef Empanadas with Olives and Raisins

This past weekend was a nice and lazy weekend (there’s no other kind for us. :)).  Chris and I didn’t do a whole lot except eat, drink and relax.  We have some organizing we needed to do but never got around to it (we’re procrastinators).  We munched on some empanadas and crab dip (recipe to come this week) while sipping on wine and beer.  It was pure delight!

These empanadas were tasty for my first try.  I based the filling off of my picadillo recipe.  I am not a dough making person (yeast and kneading terrifies me!) so I used store bought pie crust instead.  These would be fabulous for entertaining.  And you can make these ahead of time too (you gotta love that!).  Have a stellar week!

Roasted Tomato Bruschetta

Roasted Tomato Bruschetta

Yay, it’s summer! Kinda… We’ve been having some really weird weather lately.  You think it should be sunny and warm but nope! It’s cloudy, it’s windy and it’s muggy —ick! Regardless, Chris made some Mojitos over the weekend in celebration of summer-ish.  And when we drink, we like to nosh too.

I had a few fresh herbs on hand and some grape tomatoes and crusty bread sitting around.  So I made Bruschetta.  It was easy, quick to put together and delicious! Invite some friends over this weekend and make some cocktails and snack.  Happy Hump Day!

Spam & Quail Egg Sliders with Spicy Garlic Aioli

Spam & Quail Egg Sliders with Spicy Garlic Aioli

I know today’s recipe doesn’t exactly scream Mother’s Day but it’s so darn cute and tasty that I thought I’d share it anyway.  Plus it’s so easy to put together and it’s finger food! That being said, this is a scrumptious starter for any brunch, even a Mother’s Day’s brunch.

Fried Duck Egg Chorizo Cracklings Toast

Fried Duck Egg Chorizo Cracklings Toast

Last weekend Chris and I joined Kimi and her family for lunch at this tapas place.  One of the many delightful dishes we tried was a small plate called Fried Duck Egg, Chorizo Cracklings, Toast.  It was such a simple yet tasty dish that I wanted to recreate it at home.  I managed to score some duck eggs at my butcher.  I’ve been meaning to give duck eggs a try but I just didn’t know how to prepare it or what to expect.

Chili Cheese Dip

Chili Cheese Dip

I came across this recipe on the back of my chili bottle.  It was a fairly easy recipe to make and with so little ingredients so I made it over the weekend.  Although I’m not a fan of processed cheese, this was quite tasty.  My family came by and we all snacked on this dip.  My nephew LOVED it! He’s a cheese lover so what’s not to like? This dip is perfect for those casual impromptu entertaining and great for when you’re watching a game.  Bust open a bottle of beer and it’s all good!

Roasted Tomato and Fromage Blanc Crostini

Roasted Tomato and Fromage Blanc Crostini

Chris and I visited a goat farm yesterday.  We saw baby goats as young as two weeks old, and full grown ones too.  They were so cute but stinky (what do you expect from farm animals, right?).  We then made our way to the farm’s gift shop where they had all sorts of preserves, farm fresh chicken eggs (yep, they  had chicken on-site but they’re not the reason why we were there.), and cheeses made out of goat milk.  We sampled a few of their cheeses and ended up going home with four different kinds.

Radish and Butter Crostini

Radish and Butter Crostini

This recipe was once again inspired by Lindsay of { fleur de sel }.  I was intrigued by her Radishes with Butter and Salt recipe that I thought I’d give this one a try using my Homemade Butter.  What makes this dish really stand out is the good quality butter.  I love the freshness from the butter and the crunch from the radishes.  The butter (if using a good one) doesn’t make it oily or heavy.  Plus, this is such a beautiful and easy dish to make when you have company over.  Or a quick and easy snack to make for yourself in the afternoon.  Enjoy!
