Chicken Fried Rice

Chicken Fried Rice

I’m having one of those real lazy days where I want something on the dinner table without having to put a lot of effort into it, or shopping for that matter.  I know, I’m lazy but don’t we all have those days? I don’t want to order take-outs either —ick! After all the eating out, take-out is the last
thing I need.

Potato Leek Soup with Dill and Bacon

Potato Leek Soup with Dill and Bacon

After a long weekend of eating out, I was relieved to be back in my kitchen cooking my own meals.  I don’t know what it is but it’s really hard for me to constantly be eating out.  I love the idea, but the food just tasted utterly heavy and it weighed me down.  Not to mention how overly and heavily seasoned some of the meals are, I felt disgusted after eating!

Lemon Blueberry Bars

I’m starting my weekend early this week.  Chris is taking today and Friday off so we can have a little R&R and check out some new restaurants for lunch, happy hour and dinner.  Yes, I get a break from cooking and lots of it —whoo hoo! I’ll be posting pictures of my meals on Facebook, Twitter, and Google+ so if you’re not following me, there’s still time. 🙂

Tomato Cucumber Dill Salad with Feta

Tomato Cucumber Dill Salad with Feta

It has been extremely hot in my house lately so I’ve been reluctant to turn anything on in the kitchen.  I generally don’t care for salads because it leaves me hungry most of the time.  But because of the weather, I made an exception.  I paired this salad with a slice of Savory Ham Cheese and Olive Cake (recipe to come soon) and it was the perfect light meal for us.  The cucumber and tomatoes combined tasted so refreshing that I’m beginning to have second thoughts about salads.  Have stellar Tuesday!

Pancetta and Summer Squash Risotto

This past week, we’ve been doing some upkeep to the house on the outside in preparation for the rainy season.  We got our house (shingles) stained, painted, gutters patched and cleaned.  The work is almost done and it looks beautiful! Antonio, our contractor, did a great job! I can’t wait to see when it’s completely finished.

Garlic Chipotle Cheesy Bread

Garlic Chipotle Cheesy Bread

Remember my Garlic Chipotle Butter recipe? Well, a fellow blogger, Rachel of Rachel Cotterill, suggested using this on a garlic bread. I did, and it was the best suggestion ever! It rendered so much bread for just two people that I took it over and shared it with Kimi, LLS and LLJ.

Beef Stew with Caramelized Onions and Amber Lager

Beef Stew with Caramelized Onions and Amber Lager

I hate thieves! Last week, I discovered someone had stolen one of my popular posts and used it as their own content on their website, while generating ad revenues with pop-up ads.  And that’s not the worst part.  The owner of the site pulled in my content using a hidden iframe so people think they’re visiting unihomemaker.com when they’re not.  I mean, how often do people actually pay attention to the URL address they click over? I think this all originated from Pinterest.  I had to file a DMCA complaint with Pinterest and the thief’s web hosting company out in Germany.  Luckily, both parties took action and shut this guy down quickly! Has this happened to anyone before? Care to share your story with me?

Zucchini Ribbon Salad

Zucchini Ribbon Salad

Today is National Zucchini Day! And in celebration of it, I decided to make a simple zucchini salad.  I remember a few years back, I went to a restaurant in Napa Valley where they served a delicious zucchini ribbon salad.  This is my re-creation of it at home.  Are you eating zucchini today?

Oreo and Biscoff Muffins

Oreo and Biscoff Muffins

I made this over the weekend.  I was so excited to cut into it for breakfast the next morning too.  When I took a bite out of it the next day, it was mush.  Funny how it looked fabulous when it came out of the oven.  What happened here?! Cakes aren’t supposed to have a soggy and wet texture! I was sooooo disappointed I was going to chuck it in the trash.  There goes a wasted day.  Chris, however, liked it.  He said it tasted like a bread pudding.  I rolled my eyes.  He ended up taking it with him to work to share.  I was somewhat embarrassed but whatever!
