Savory Ham Cheese and Olive Cake

Savory Ham Cheese and Olive Cake

A couple of weeks ago, I mentioned in this post that I would publish a recipe for a Savory Ham Cheese and Olive Cake.  I completely forgot and realized yesterday that this recipe was still in draft mode.  Ack! So here it is…

Savory Ham Cheese and Olive Cake

This savory cake is like a meal of its own.  You can pair with soup, salad or stew or have it by itself.  It’s flexible and you can use whatever cooked meat you have on hand or cheeses.  You can even throw in some herbs and spices.  This is my first savory cake and I foresee a lot of them in my future.
Happy Friday!

Ingredients:

  • 4 eggs
  • 2 tablespoons of unsalted butter, melted and cooled
  • 1/3 cup of olive oil
  • 1/2 cup of white wine (I used a Chardonnay)
  • 1/4 cup of port
  • 1 2/3 cups of all-purpose flour
  • 2 1/2 teaspoons of baking powder
  • 1/4 teaspoon of pepper
  • 2 cups of ham, chopped
  • 1 cup of green olives with pimento, sliced
  • 1 cup of shredded pepper jack cheese

Preparation:

Preheat the oven to 400 degrees F.  Grease a 9-inch loaf pan.

In a medium bowl whisk together eggs, butter, olive oil, white wine and port; set aside.

Using a stand or electric mixer (or mix by hand) stir together flour, baking powder, pepper, chopped ham, green olives and cheese.  Slowly pour the egg mixture into the flour mixture and mix until just moistened.  Do not over mix.

Pour batter into the prepared pan and bake for 45-50 minutes or until toothpick/tester inserted into the center comes out with a few crumbs attached.  Let the bread cool completely before cutting into the pan.

  1. wow, this looks amazing, I’d skip the ham but I’d gobble it up with cheese or even go all decadent and use it to make a sandwich. You’re really making me want to bake this like … right now!

  2. Mmmm…I love the sound of a savory bread, with the ham inside. I’d love it alone or alongside lunch or dinner. Can’t wait to see other versions you make in the future! Have a great weekend!

  3. WIth its port, white wine, olives, and cheese, Anne, this bread sounds incredible! I’ve not seen these ingredients in the same loaf before — and I’m anxious to see what this tastes like. Thanks for sharing your recipe.

  4. I’ve not made a savory cake. I’ve obviously been missing out! This looks terrific. Love the combo of flavor you’ve included in this. Great recipe – thanks.
