I’m having one of those real lazy days where I want something on the dinner table without having to put a lot of effort into it, or shopping for that matter. I know, I’m lazy but don’t we all have those days? I don’t want to order take-outs either —ick! After all the eating out, take-out is the last
thing I need.
A lot of these items I keep on hand. So for me, it was really quick to put together. Of course you could put whatever your little heart desires into your fried rice. It’s those dishes where you can clean out your fridge, as long as you have soy sauce. Soy sauce is a must in fried rice. Don’t you agree? Be creative with it!
Ingredients:
Chicken Marinade:
- 1/4 cup of aged shaoxing rice wine (dry sherry works fine here too)
- 1 tablespoon of soy sauce
- 2 teaspoons of sesame oil
- 1 tablespoon of honey
- 1 pound of chicken tenders, cut into 1″ pieces
Fried Rice:
- 4 eggs
- 1/4 cup of milk
- olive oil for cooking
- 1 onion, chopped
- 3 cloves of garlic, finely chopped
- 4 small carrots, diced
- salt and pepper to season
- 2 1/2 cups of cooked rice (day old rice works great here)
- 1/3 cup of soy sauce
- 1/4 cup of aged shaoxing rice wine
- 3 tablespoons of sesame oil
- 3/4 cup of frozen peas
- cilantro leaves for garnish (optional)
Preparation:
In a medium bowl combine rice wine, soy sauce, sesame oil, honey and chicken. Mix everything with your fingers. Refrigerate and let it marinade for 30 minutes.
In another medium bowl, beat eggs with milk; set aside.
In a large deep skillet over medium high heat, add olive oil and chicken. Sauté chicken until cooked, about 5-7 minutes. Using a slotted spoon, transfer chicken to a clean bowl and set aside.
In the same skillet over medium heat, drizzle some olive oil and add chopped onions and garlic. Cook until onions are soft, about 5-7 minutes. Add carrots and season with salt/pepper. Pour eggs into the skillet and scramble it until almost cooked, but still runny. Add rice. Using your wooden spoon, break up the rice. Add soy sauce, rice wine and sesame oil. Stir everything together to combine. Then stir in cooked chicken and frozen peas. At this point the rice is ready. Remove from heat and check for seasoning before serving. Garnish with cilantro leaves.
Yeah, pretty much me today. I don’t feel like cooking at all, that’s so weird! I guess this is going to be my dinner today, it looks so easy yet delicious! I think I even have brown rice leftover from a couple of days ago, so it’ll be even easier, yay!
Great job on this fried rice, love the colors! Fried rice is a favorite of mine for a quick dinner too and better yet you can throw so many vegetables in it that need to get out of the fridge!
Fried rice is the BEST way to use up stuff in the fridge. I’m totally craving it now. Yours looks so delicious 🙂
I love fried rice, Anne! This is a great way to use up veggies I have in my fridge. Lovely idea!
Fried rice is such a nice simple recipe, great photos!
yum, love chicken fried rice.
this is my husband’s favorite at EVERY ASIAN restaurant…. he never experiments.
Fried rice is so versatile. I remember growing up my mom used to throw in some cut up hot dogs and I devoured it. And it goes well with a lot of things, or like this it can be a meal of its own.
It looks comforting and delicious – yum!!
And um, this chicken fried rice is just pure genius!!!
Whenever I want something delicious and quick, then it has always been a fried rice or pasta with tomato or meat sauce. Your rice looks very tasty!
I typically don’t like eating rice, but fried rice is another matter! One of the things I love about fried rice is you can toss almost anything in it. Your chicken fried rice looks delicious!
I love Fried Rice and your pics look great. Making me hungry so I know now how to fix something quick and tasty.
Goes great with some kimchi! 🙂
Totally agree – I love making fried rice whenever I need to clean out the fridge or am just feeling lazy! Yours looks delicious! It’s fun getting to change it up each time too – so versatile!
This looks just like take out food…but better! Definitely need to try this. 🙂
We had fried rice this week too! Great minds think alike, oui? 🙂
Your fried rice looks so healthy and not greasy in anyway! I would love a big bowl. I recently started making fried rice and my husband and I love it with some curry powder. Gives it great extra flavor. I like adding some smell pieces of chinese sausage too if I don’t have too many other ingredients going on in there. I’m totally craving it now. : )
Look so delicious, perfect one dish meal! My husband will love this for sure!
Agree, fried rice, I am sure, was invented to put a quick meal on the table and to clean out the fridge
I agree. Fried rice and soy sauce do go hand in hand. 🙂
This looks like a delicious dish. And I’m so jealous of your rice. Mine never comes out that good, no matter which way I cook it! Pinned!
I wish I had seen this post before dinner instead of after. I had some leftover roasted chicken that would have made a great stir-fried rice. Your dish looks so tasty, Anne, and so easy to make. I’m sure to be coming back to this post in the not so distant future. 🙂
I think I’m gonna cook this one tonight. Cheers for the recipe Uni Homemaker 🙂

Anne,
Summer lazy days are the best! I had one myself, just yesterday. I love this little concoction, perfect for any kind of day!!
I love homemade twists on takeout, and your fried rice looks incredibly delicious, Anne!
I LOVE clean out the fridge dishes, Anne. I just don’t don’t do it often enough. Like tonight for example, we had take-out! Sure would have felt a heck of a lot better if I were sitting down to your beautiful Fried Rice:)
Thanks for sharing…
This is way better than take aways for sure!
Takeout at home = the best! All the tastiness without the guilt.
Your fried rice looks amazing, Anne! And the chicken marinade sounds delicious…I bet it puts this dish over the top!
You’ve just remind me to my childhood grown up breakfast supper…
this is called Nasi Goreng Ayam in Indonesia….
I’ve had so many of those laze days lately it’s a wonder I have a food blog sometimes. Fried rice just gets you out of the pickle doesn’t it? Love it and the chicken marinade is amazing!
Fried rice is such good stuff. Easy to make, and it’s flexible – you can make it with almost anything. Really nice version here – lovely flavors. Thanks.
There must be something in the air! I haven’t felt like cooking either. This is a perfect school night meal!
Beautiful photo!
I have those lazy nights all the time. And, I don’t like take out either. Actually, we don’t even really have a take out place up here where we live. Which I’m glad. But our grocery store just started staying open past 6 pm on a Sunday night…that’s exciting for the town! Because sometimes, I don’t even know what to make until it’s dinner time and the darn store was closed.
I’m going to make this for the boys’ lunch tomorrow when they come have their break from school. They’ll love it! Pinning and printing! I’ll let you know what the boys think. (=
Awwww… Gloria, thanks! I hope you guys will enjoy it! Thanks for stopping by. Makes me happy when I hear from you. 🙂 Have a great rest of the week! xo
Chicken fried rice used to be my go-to Chinese dish 🙂 Great recipe
I love these clean out the fridge type recipes that result in something utterly delicious! And soy sauce is a definite must! This is packed with goodness.
