Baileys Chocolate Chunk Cookie Bars

I baked these for my lovely neighbors.  There are five units in our little cluster, including us.  So really, I’m baking for four households (~1-2 person household).  I have to say, I’m pretty lucky to have friendly and easygoing neighbors.  We are a tight-knit bunch and we all look out for each other.  I am the foster Mommy to Cairo, Ashes and Marbles (not pictured here) when my neighbors (their parents) are out of town.  Isn’t he cute?

These cookie bars are delectable! Baileys Irish Cream and Scharffen Berger chocolate chunks all wrapped-up into a cookie bar.  It’s so good! It’s even better with a glass of milk to wash all that yummy goodness down.  Chris and I sampled it before dinner and it was hard not to eat more than one.  So here’s to celebrating good neighbors.  Now go into the kitchen and bake some.

Baileys Chocolate Chunk Cookie Bars

Ingredients:

  • 2 1/2 cup of all-purpose flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • 1/2 cup (1 stick) of unsalted butter, softened
  • 1/2 cup of granulated sugar
  • 1/2 cup of dark muscovado sugar
  • 2 large eggs
  • 1/2 cup of buttermilk
  • 2/3 cup of Baileys Irish Cream
  • 1 (6 ounce) package of semi-sweet chocolate chunks (I used Scharffen Berger)

Baileys Chocolate Chunk Cookie Bars

Preparation:

Preheat the oven to 375 degrees F.  Grease a 9″ x 13″-inch baking pan.

In a medium bowl whisk together flour, baking soda and salt; set aside.

Using a stand or electric mixer (or mix by hand) cream butter and sugar until fluffy.  Then add eggs and continue to beat until combined, scraping down the sides of the bowl.  Add buttermilk, Baileys, and beat until well incorporated.  Slowly add in the flour mixture and mix until just moistened.  Fold in half (3 ounce) of the chocolate chunks.

Pour batter into the prepared pan and use a spatula to distribute the batter evenly.  Place the remaining half of the chocolate chunks (3 ounce) on top of the batter, distributing them evenly.  Bake for 20-23 minutes or until the top is golden brown and the toothpick/cake tester inserted into the center comes out clean.  Let the bars cool completely before cutting into the pan.

  2. I am delighted that you have some really good neighbors. Sometimes that means everything in the world if you can be there for each other in the good times like celebrating with some delicious baileys chocolate chip chunk bars from Anne, or giving someone a lift to work because you found out your car had a flat tire. Good neighbors make everything better.

  4. Well, that’s one way to keep the turnover rate in the neighborhood down. Make these cookie bars for your neighbors and no on will want to leave. These look delicious, Anne, and that pic of your cat is really something!
